The Snake River Farms pork collar is a beautifully marbled cut with a rich, remarkable flavor. The collar is part of the shoulder and is called the ā€œmoney muscleā€ in competition BBQ circles.Ā 

The pork collar is cut from the shoulder portion that runs from the neck to the tip of the loin. This versatile, boneless item is excellent smoked for pulled pork, roasted whole, braised or cut into steaks.

Kurobuta is the Japanese term for ā€œblack hogā€ and refers to animals of the Berkshire variety, a heritage breed. Kurobuta pork is highly marbled with a beautiful dark color, firm texture, and naturally delicious flavor. Our animals are treated humanely and are raised on small family farms without hormones using a natural slow feed process.
